The best light for outdoor portraits in my opinion is diffused light such as from a cloud cover or shade. If that's not possible, then try having your subject turn away from the sun such that their face is in shade. That's what I did with this Sikh man in Punjab, India during a festival. You can see that the sun is striking the back of his shirt but that his face is in soft light. Had he been facing the sun, he would have been squinting much more than he is already and the contrast, the shadows, and the exposure would all have been challenges. My settings for this were 1/400th of a second, f/5.0, and 100 ISO. I used a 70-200mm lens for this portrait.
