If you are forced to shoot in bright sunlight when the position of the sun in the sky means harsh contrast, it can work if the subject(s) are illuminated from the correct angle. Look at the Cuban cowboy's face and notice that it is almost fully lit. Had it been in deep shadow, this picture wouldn't have been successful. Even though his eyes are dark, from this distance most of his face is illuminated and we can see most of the detail of his smiling countenance. The same is true for the cows. Yes, there are shadows, but their heads and bodies are primarily lit by direct sunlight. If the sun had been behind them, the shadows would have obscured too much detail. My settings for this picture were 1/1250, f/14, 100 ISO, and I used the new Canon 100-400mm lens.
