My photo tour group encountered peak colors in Vermont pretty much everywhere we went. It was spectacular. Here is one example. This is not enchanced at all in post-processing. All I did was some burning and dodging. The layers of color, graphic design of the mountains and trees, and the intensity of the reds, oranges, and yellows all went into making amazing pictures. I took this shot in Peacham of the setting sun on hills surrounding the village. My settings were 1/500, f/9, and 400 ISO, and I used a 400mm focal length. The camera-subject distance was far enough so depth of field wasn't relevant, but I still used an aperture small enough to guarantee the trees closest to me as well as the distant mountain were both sharp. The lighting we had was magical. It kept changing as the clouds moved, and this produced a multitude of creative compositions.
